Level layouts are randomly generated, each of the levels has its own criteria for the level generation though.

Free Roam:Wide open map, only 4 walls, plenty of apples, and no bad apples

Easy Mode

Small maze with wide corridors, a decent amount of apples, and no bad apples

Medium Mode

Medium maze, medium sized corridors, a fair amount of apples and a few bad apples


Hard Mode

Large maze, smaller corridors, an equal number of apples and bad apples, be wary


The larger corridors make it a lot easier to double back on yourself, as well as giving you more space to navigate to cut off and catch apples, while smaller ones make it a lot harder to turn, and force you to turn a lot more frequently, which is very difficult at high speeds.
